Banana cake is so easy to make. Here is the recipe I use:
- Half cup caster sugar
- 125 grams butter
- 2 eggs
- 1.5 cups self-raising flour
- 0.5 teaspoon bicarbonate soda dissolved in 1 tablespoon milm
- 2 bananas mashed together with a few drops of vanilla essence
- Pecan nuts
Cream the butter and sugar. I usually soften the butter in the microwave in a glass bowl then add the sugar.
Add eggs one and a time beating in well.
Then add bananas, milk and soda.
Lastly, fold in the flour.
Pour mixture into baking tin lined with baking paper. This is much easier than the old-fashioned method of greasing a tin with butter.
Place pecan nuts on top of the mixture
Bake in a greased tin in a moderate overn (180 deg C/375-400 F) for 45 – 50 minutes.
