“Auntie Joy” as she was affectionately known cooked a superb Sunday roast and made a variety of biscuits and slices.
Today I made bran biscuits using her recipe but adding chopped raisins for additional flavour.
- 120g Butter
- 30 grams sugar
- 1 egg
- 1 cup self-raising flour
- 1 cup bran
- 2 tablespoons chopped raisins (I will try dried apricots next time)
- 1 cup Kelloggs All Bran Cereal
Soften the butter (I use the microwave) then add the sugar and mix well.
Add the egg and beat in to the mixture.
Add the flour and mix well, then add the bran and mix well.
Add the chopped raisinns and the All-Brain.
Mix well then place the mixture on a board or marble kitchen bench which has been lightly dusted with flour. Roll the mixture out to about 0.5 cm thickness then use a cookie cutter to shape the biscuits.
Place on a baking tray with a sheet of baking paper than bake for 12-15 minutes at 200 degrees C.
